Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)

Instructions

  1. Rinse the wild rice under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Cook until soft.
  4. Add garlic and mushrooms. Cook until mushrooms are tender.
  5. Add wild rice, vegetable broth, thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes.
  7. If using, stir in heavy cream before serving.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Reheat on the stove over low heat.
  • Add more broth for a thinner consistency.
