Description
A hearty and comforting wild rice mushroom soup.
Ingredients

- 1 cup wild rice
- 4 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 1 cup heavy cream (optional)
Instructions
- Rinse the wild rice under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Cook until soft.
- Add garlic and mushrooms. Cook until mushrooms are tender.
- Add wild rice, vegetable broth, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- If using, stir in heavy cream before serving.
Notes
- Store leftovers in the fridge for up to 3 days.
- Reheat on the stove over low heat.
- Add more broth for a thinner consistency.
