Ingredients

- 2 medium zucchinis, sliced
- 2 medium tomatoes, sliced
- 1 pie crust
- 1 cup shredded cheese
- 1/2 cup onion, chopped
- 2 eggs
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust and place it in a pie dish.
- Layer the zucchini and tomato slices in the crust.
- In a bowl, mix the eggs, milk, onion, salt, and pepper.
- Pour the egg mixture over the vegetables.
- Top with shredded cheese.
- Bake for 35-40 minutes until set and golden brown.
- Let it cool for a few minutes before serving.
