- 1 cup coconut milk

- Fresh parsley for garnish
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add pumpkin puree, shredded chicken, chicken broth, coconut milk, ginger, and cumin.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
