Ingredients

- 2 cups parsnips, peeled and chopped
- 2 cups sweet potatoes, peeled and cubed
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1 teaspoon salt

- 1 teaspoon thyme, dried
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix the vegetables with olive oil, maple syrup, salt, pepper, and thyme.
- Spread the mixture on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until tender.
- Serve warm.
