- 1 cup cashews
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix chicken, cashews, and vegetables.
- In a separate bowl, whisk together soy sauce, honey, olive oil, garlic, and ginger.
- Pour the sauce over the chicken mixture and toss to coat.
- Spread the mixture evenly on a sheet pan.
- Bake for 25-30 minutes, until chicken is cooked through.
- Stir halfway through to ensure even cooking.
- Serve hot.
